Client Profile: A fictional, established baking blog with under 100k followers on Instagram and Tiktok. Recipes are posted twice weekly on the blog, and a static Instagram post featuring a recipe is made once weekly. Reels should be warm and make the viewer feel like they’re a guest watching the perfected cooking process while the narrator describes the ups and downs of what it took to get there. Aesthetic imperfection is crucial.

I’m so excited by how cute these turned out! They use the same cherry puree I’ve been experimenting with for the last two weeks. Not only is it the perfect drizzle garnish, it’s also in the batter to give them a tangy boost.

These would also be great with fresh whipped cream. I’d also recommend a caramel drizzle if you’re feeling adventurous 😋 Let me know in the comments how yours turn out!

I’ve wanted to branch out from my classic strawberry buttermilk pancakes for some time, and since I’ve been experimenting with cherry puree for the last couple of weeks, I thought “why not?”

After making these several ways and still feeling like something was missing, it finally hit me: add the puree to the batter! Not only does it boost the flavor of the cherry pieces, it helps the pancakes be soft and fluffy. It doesn’t curdle the buttermilk luckily, but I have upped the sugar to balance out the tartness.

I like to sift my dry ingredients in the name of fluffiness, then whisk them into the wet ingredients. I know this is backward to most recipes have you mix things. I have no good rationale for this, it’s just how I like to do things.

I had the best luck getting the pancakes to fluff with a screaming hot griddle. Not quite until smoking, but almost there. I like to use a thermometer to monitor my griddle temp at 400F, and I like to set my timer for 2 minutes after scooping the batter. Pro tip: use a high-smoke point oil like peanut oil to prevent smoking. I got them to be uniform by scooping the batter into a 6-inch cookie cutter. Time to flip!

Once they’re done, stack them high on a plate and top with more cherry puree, and fresh cherries if you’re feeling fancy. Recipe is on my blog, you can find the link in my bio, be sure to follow for more.
